  • Spring at The Fabric with a Fresh Spring Salad

    With spring arriving and our gardens coming alive, it’s the perfect time to bring fresh flavours from garden to table. Here’s a delicious Spring Salad recipe that you can easily dress up using herbs and greens picked straight from Cooks Patch.

    Spring Salad Recipe

    Ingredients
    • 3 bunches (≈24 spears) asparagus, woody ends trimmed
    • 120 g snow peas, trimmed and strings removed
    • 1 head baby cos / romaine lettuce
    • 2 cups fresh or frozen peas
    • 90 g goat’s cheese (or substitute feta, mozzarella, etc.)
    • 1 cup loosely packed fresh mint leaves, torn

    Lemon Dressing
    • Zest of 1 lemon
    • 2 tbsp lemon juice
    • 6 tbsp extra virgin olive oil
    • ¼ tsp salt + ¼ tsp pepper

    Instructions
    1. Bring a large pot of water to the boil.
    2. Blanch snow peas (1½ min), then add asparagus (1½ min), then peas (30 sec) until bright green and al dente.
    3. Immediately drain and rinse under cold water to stop cooking.
    4. Prepare lettuce leaves (smaller ones whole, larger ones halved).
    5. Cut asparagus into pieces on a slight angle.
    6. Shake dressing ingredients in a jar.
    7. Combine the vegetables in a bowl, toss with dressing.
    8. Arrange on a platter, top with goat’s cheese. Serve immediately.

    Notes & tips:
    • You can prep vegetables a day ahead (keep them dry and cool) and combine them just before serving.
    • Any crisp lettuce or greens will work.
    • Feel free to mix in extra veggies or swap the cheese to suit your taste.
    • Use herbs from your garden (or from Cooks Patch!) for fresher, brighter flavour.

    Pick your own fresh herbs: Mint, basil, parsley, chives, and more - next time you prepare this salad (or any dish), drop by Cooks Patch and harvest a handful of mint or basil.
    Use the communal kitchen / BBQ: After gathering your greens, head to the shared kitchen or barbecue area to prep, cook, and enjoy meals with neighbours.
    Grow your own: If you enjoy this experience, consider planting your favourite herbs or salad greens in your own veranda, pot, or small garden plot.

    As part of our dedication to leaving a positive legacy from the communities we create, Mirvac has partnered with Homes for Homes. An innovative not-for-profit initiative led by social enterprise, The Big Issue, Homes for Homes creates new funds to increase the supply of social and affordable housing to help house homeless and disadvantaged Australians. Recognising the intrinsic value that having shelter brings, in the physical sense and as a sense of belonging and wellbeing, Mirvac has committed to 0.1% of the sale of every Townhome at The Fabric going toward increasing the supply of social and affordable homes in Victoria.  

  • A Warm Welcome to our Residents

    In July 2022, we welcomed our first happy residents to The Fabric. In late 2023, we settled our stage 2 homes around Patchwork Park.
